WE KEEP IT REAL

We strictly flavour our fermented tea with real ingredients that are used either in their fresh or dried form. We NEVER use flavouring additives, fruit juices, syrups, or pre-made kombucha concentrates. (You’d be surprised to know how many companies do just that!) Instead, we use quality organic ingredients, with a focus on fresh, wild-harvested, and locally grown plants & medicinal mushrooms.

The base of our Kombucha making is where the real flavour resides! That’s why we choose our main ingredients with care!

GREEN TEA:

Our delicious, top quality Japanese green tea is certified organic and sourced from a tea supplier that is a member of the Ethical Tea Partnership.

YERBA MATE:

In our green tea based kombuchas, we add unsmoked Yerba Maté used in it’s freshest green form in order to conserve it’s nutrients. It is responsibly grown, certified organic and fair-trade.

RAW CANE SUGAR:

The sugar is a necessary ingredient and necessary food for the bacteria and yeast in Kombucha. We are proud to say the sugar we use is raw and unprocessed, which means it is packed with vitamins and minerals and it’s digestive enzymes haven’t been destroyed through heat! It is also certified organic and fair trade and sourced from a cooperative in Paraguay that currently has over a 1000 members/farmers. Their goal is to support the autonomy and empowerment of small sugar cane producers in the region of Arroyos and Esteros.

FERMENTED IN MICRO BATCHES

Origin’s Kombucha tea is fermented in 10 gallon Ceramic Crocks, which are handmade, lead-free and specifically made for fermentation! Brewing in smaller quantities ensures a quality ferment each and every batch, allowing the Bacteria and Yeast to properly do their magic. Smaller brewing vessels also create AMAZING and THICK SCOBYS, (A SCOBY is the culture needed to create Kombucha) which is a sign of a healthy and balanced ferment.

We strive for a balanced ferment when making our Kombucha to ensure each batch is getting a proper dose of diverse and healthy organic acids! Organic acids in Kombucha tea are the result of bacteria and yeast consuming the available sugars, breaking them down and converting them into healthful organic acids such as acetic and gluconic acid. Organic acids are the foundation of Kombucha and what gives this amazing sour beverage its known cleansing, digestive, supportive and energizing benefits!

LONGER FERMENTATION TIME

We ferment our Kombucha, from start to finish, for about 4 to 5 weeks, in a 3 step process. By using a ‘Fresh Batch’ method of fermentation, the freshly sweetened tea sits with our Kombucha cultures for 2 full weeks. This allows enough time for different types of beneficial bacteria and yeast to settle in and properly convert sugars into a variety of organic acids and beneficial enzymes.

Once this step is complete, we transfer our ready fermented tea (without the SCOBY) to our highest quality, Italian Made, stainless steel vessels, where our ingredients will be left macerating and infusing their properties, colour and flavour for up to a week. This 2nd step is also responsible for consuming remaining sugars that were left unconsumed during the 1st step.

NATURAL CARBONATION

Our Kombucha is naturally carbonated which means we do not add ANY C02 to our brews. The carbonation happens in each individual bottle under an anaerobic fermentation process. The Carbonation process is the final process in which the brew really comes together! It is the final active force which eats up residual sugars, creating more acids and refining it’s full bodied flavour! The living healthy bacteria will also form a baby scoby in the sealed bottle during this process. This is a sign of a quality ferment and means the naturally effervescent beverage is fully active and alive!
You can also eat the SCOBY, if you’re tempted, as it contains healthy bacteria for your gut.
